Ingredients

  • 12 large sea scallops
  • 1 tablespoon olive oil
  • 1 tablespoon unsalted butter
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon fresh lemon juice
  • Lemon zest for finishing

Lemon Pea Purée

  • 2 cups frozen peas or fresh peas
  • 1 small garlic clove
  • 2 tablespoons olive oil
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon lemon zest
  • 2 tablespoons vegetable broth or water plus more as needed
  • 2 tablespoons fresh mint basil, or parsley
  • 1/4 teaspoon sea salt
  • 1/8 teaspoon black pepper

For Garnish

  • Fresh microgreens
  • Fresh herbs
  • Lemon wedges
  • Drizzle of olive oil
  • Flaky sea salt optional

Instructions

  • Boil peas for 2–3 minutes, until bright green and tender.
  • Drain peas and add them to a blender or food processor.
  • Add garlic, olive oil, lemon juice, lemon zest, broth or water, herbs, salt, and pepper.
  • Blend until smooth, adding more liquid as needed.
  • Pat scallops very dry and season with salt and pepper.
  • Heat olive oil in a skillet over medium-high heat.
  • Add scallops in a single layer and sear for 2–3 minutes without moving.
  • Flip scallops, add butter, and cook for 1–2 minutes more.
  • Finish with lemon juice.
  • Plate scallops over lemon pea purée and garnish with microgreens, herbs, lemon zest, and olive oil.

Notes

For the best sear, make sure the scallops are very dry and the skillet is hot before cooking. Serve immediately for the best texture.
